a modernized version of traditional ossobuco


this dish s primary ingredient, veal shank, common, relatively cheap , flavorful. although tough, braising makes tender. cut traditionally used dish comes top of shin has higher proportion of bone meat other meaty cuts of veal. shank cross-cut sections 3 cm thick.


although recipes vary, start browning veal shanks in butter after dredging them in flour, while others recommend vegetable oil or lard. braising liquid combination of white wine , meat broth flavored vegetables.
